Greek Salad

My sweet Ma was here last week. Her and my sister Aunie came for a visit to see our life here on the lake. We enjoyed our time together - of course it went too fast. Ma had a few good recipes she shared with us while she was here. One of them was a Greek salad recipe. It was hit! We've had it twice since she left. The dressing is delicious. Here is the fresh and fantastic recipe......

Greek Salad 
Source: Adapted from the South Beach Diet Cookbook
Servings: 2-4 

Salad
1 small package romaine lettuce
1 large cucumber, sliced
1 small package cherry tomatoes
1 cup red onion
1 cup Kalamata olives
1 cup feta cheese

Dressing
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 small clove garlic
2 teaspoons dried oregano leaves
1 teaspoon salt

Combine lettuce, cucumber, tomato, onion, olives and cheese in large bowl. 

Whisk together the oil, lemon juice, garlic, oregano and salt in a small bowl. Pour over salad and toss until covered.
