Baked Sweet Potatoes

As I mentioned in my last post, my mom was just here and shared some recipes with us. The second recipe she shared was a baked sweet potato recipe. She had made this recipe at home and loved it. We decided to give it a whirl. The original recipe called for Oregano, but mom thought Rosemary would taste better with sweet potatoes. She was right! These were so simple and tasted excellent!

Baked Sweet Potatoes

Servings: 4

3 large sweet potatoes
3 tablespoons olive oil
2-3 pinches rosemary

2-3 pinches salt
2-3 pinches ground black pepper


Preheat oven to 350 degrees. Coat the bottom of baking dish with olive oil.

Wash and peel the sweet potatoes. 

Cut them into medium size pieces.

Coat the sweet potatoes with olive oil. Helpful Hint: an easy way to make sure they are evenly coated is to put them in a plastic bag and shake them up.

Move the sweet potatoes to baking dish and sprinkle the rosemary, salt and pepper.

 Bake 60 minutes or until soft. Then enjoy!
